Welcome to the forum!
It would help folks give you some useful feed back if you would give us a run down on what sort of setup you have in mind.
Engine, fuel system, blown or NA all make a difference in how you can run your nitrous. How big of a shot you have in mind, and how much experience you have with nitrous would also help guide the responses.
Short answer is yes there are folks running nitrous with E85, it seems to be a fuel that is very Nitrous friendly and will produce a bit more power than the same nitrous shot on gasoline would.
We have some older posts on nitrous you might want to look through by doing a search.

Yes, I run N2O with E85 and have flowed a few systems for that very purpose. It's hard to say what jet spread works with E85 because there is so much that varies from system to system and plate to plate.
The Problem is that the solenoid port size and spray bar hole sizes vary quite a bit from manufacturer to manufacturer -- some will flow enough E85 to work well some require modification to work.
If you need someone to flow it for you, I can do it pretty inexpensively. _________________ E85 racer and E85 carb builder
